Ingredients


For the Dressing

  • 1 lemon

  • 4 Tbsp olive oil

  • 2 cloves garlic, crushed

  • ½ Tbsp dried oregano

  • ½ tsp salt

  • Freshly ground black pepper

  • 2 packets or ready-cooked puy lentils

  • 1 bunch parsley

  • 1 punnet baby tomatoes

  • ½ small red onion

  • 100g feta, crumbled


Directions


  1. Use a microplane, zester, or small-holed cheese grater to remove about 1 Tbsp of the lemon zest. Set aside.

  2. Juice the lemon and measure 4 tablespoons of juice for the dressing.

  3. In a small bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, and freshly cracked pepper. Set aside.

  4. Rinse parsley, shake off excess water, and roughly chop the leaves. Cut baby tomatoes in half and finely dice the red onion.

  5. In a large bowl, combine lentils, chopped parsley, tomatoes, red onion, crumbled feta, lemon zest, and dressing. Stir well to coat everything evenly.

  6. Enjoy immediately or refrigerate for later—it tastes even better after a few hours!
