Low Sugar Brownies That Support Blood Sugar and Hormone Balance

Ingredients:


  • 220g coconut oil

  • 100g dark chocolate (minimum 90% cocoa solids)

  • 100g organic cocoa powder

  • 4 large eggs, beaten and at room temperature

  • 340g xylitol

  • 2 tsp gluten-free baking powder

  • 100g nuts, chopped (such as walnuts or pecans)



Directions:


  • Preheat your oven to 180°C. Line a 7x11 inch baking tray with baking paper.

  • Gently melt the coconut oil and dark chocolate together in a bowl over simmering water.

  • In a separate bowl, combine the cocoa powder, xylitol, baking powder, and a pinch of salt.

  • Off the heat, whisk the dry ingredients into the melted chocolate mixture. Then slowly beat in the eggs. At first the mixture might look a little split or oily. Keep whisking and it will come together.

  • Fold in the chopped nuts.

  • Pour the mixture into your baking tray and bake for 25 to 30 minutes depending on how soft you like your brownies. They will firm up as they cool, so it’s better not to overbake.

  • Let cool in the tin for 10 minutes. Then slice into squares and transfer to a wire rack.

These brownies are rich, satisfying, and a much better choice when you’re mindful of hormone health and long-term wellness.
